3 Simple Steps (And A Few More) In Making Water Kefir Drink
Below are three simple steps before you start enjoying your own home-made water kefir.
Step 1 | Buy Your Water Kefir Grains
One, buy kefir grains or ask for free real grains from a grower. I’m sure by now you are itching to make your own organic and healthy soda pop.
So where can I find kefir grains?
Since the grains are made up of living micro-organisms, they grow. You could end up with more grains than you had before you began making water kefir drinks. It is for this reason that some kefir grain growers are all too willing to share their grains since they are sure to grow back anyway. But if you don’t know anyone who grows kefir, you can purchase the grains online.
There are two types of grain available: fresh and dried. Fresh grains need to be used right away or else they might get contaminated and die. This was why I bought dried grains online, and now I have more than I bought.
Step 2 | Rehydrating Dried Kefir Grains
Two, rehydrate the grains.
Since it is advised that you purchase dehydrated grains, it is very important, therefore, to know how to rehydrate them. Rehydrate your newly-bought water kefir grains following these 5 easy-to-follow steps:
1. Prepare a sugar-water mixture by dissolving 4-6 tablespoons of sugar in four cups of water in a glass jar. Mix well in room temperature.
2. Add the kefir grains.
3. Cover well using a coffee filter or tea towel.
4. Let the grains sit for at least 3 days until they are plump; but not over 5 days. Keep this lead time in mind so that you purchase grains 5 days prior to the time when you wish to actually start making water kefir. Notice that if you put in 2 tablespoons, the grains will plump up to about a third of a cup.
5. After 5 days, prepare to make your water kefir using the rehydrated grains. You have woken up the grains and they are ready for action.
Step 3 | Make Your Very Own Water Kefir
And three, it’s time to make your own water kefir. It’s easy, and here again are five easy steps (and a bit more) to do it.
1. Prepare your water by sweetening it. It is best to use less refined brown sugar and dissolve it by heating. The grains have a sweet tooth and they love organic sugar. Mix 3/4 cups of sugar in a 3/4 gallon of water or 1/3 cup of sugar in a cup of water.
2. Let the mixture cool down to room temperature then add 3 more cups of water.
3. Pour your sugar-water into a half-gallon glass jar and then add 1 1/2 more cups of water.
4. Do the magic by adding 1/3 cup of water kefir grains. Let the grains float freely as they start fermenting the liquid upon contact.
5. No, you can’t drink just yet. Cover your jar with a cloth napkin or paper towel and let it sit for a few more days (3 to 5 more days); the longer you let it sit, the less sweet it gets.
This totals to a 10-day lead time before you can begin to include water kefir in your regular diet.
A tip: Some kefir users put half an eggshell in the mix. The grains seem to be very attracted to the shells of eggs.
Another tip: Sweeten with a tablespoon (or more if you like) of vanilla or get ready for a second fermentation.
The second fermentation goes like this.
1. Remove the grains from the water kefir and store in a cooler for future use.
2. Improve the taste of your water kefir by adding fruit juices, dried fruit or fresh fruit, depending on your taste.
3. Cover with plastic wrap, making sure the second fermentation is done with zero air and let it stay for another day or two.
4. Finally, strain off any fruit residues and place your water kefir in a bottle of any container that suits your style.
5. Drink up, and enjoy your healthiest soda pop ever.
Final tip: There’s something even better than water kefir, which is brewed water kefir. Here’s how to brew water kefir to create your own ginger-beer kefir.
1. Mash, grate or pound ginger to make sure you juice it well.
2. Mix ginger juice with water and sugar. Stir well to dissolve.
3. Add water kefir grains.
4. Seal the mixture tight and let it sit for two days but stir after 24 hours.
5. Strain the liquid, refrigerate and enjoy your very own brewed water kefir beer.
